Warm evenings don’t come around all that often, so when they do, you want to make the most of them. You might fancy a last-minute dinner on the patio or a relaxed meal with friends; summer evenings call for food that’s fresh, light, and easy to prepare.

Here are some of our favourite recipes that come together quickly, making the most of seasonal produce, and are perfect for warm weather dining.

Summer Vegetable Frittata

Great served warm or cold, this frittata is perfect for using up whatever’s in your veg box. It’s quick to make and pairs brilliantly with a crisp green salad.

Ingredients:

  1. Preheat your grill to medium-high.
  2. In an ovenproof frying pan, sauté the onion in a little oil until soft. Add courgette and cook for 2–3 minutes.
  3. Stir in potatoes and cherry tomatoes.
  4. Beat the eggs with milk, season, then pour into the pan. Cook on a low heat until the bottom is set.
  5. Scatter over the cheese and finish under the grill until golden and puffed.

Herby Couscous Salad with Grilled Veg

Couscous is a lifesaver on hot days; it cooks in minutes and makes a great base for all sorts of summery add-ins.

  1. Place couscous in a bowl, pour over the hot stock, cover, and leave for 5 minutes.
  2. Meanwhile, grill or roast the veg until softened and slightly charred.
  3. Fluff the couscous with a fork, stir in grilled veg, herbs, lemon juice, and a drizzle of oil.

Optional extras: crumbled goat’s cheese or leftover roast chicken.

Open-Faced Sandwiches with Seasonal Toppings

Think of this as a British twist on Scandinavian smørrebrød. Toasted slices of sourdough or rye topped with colourful combinations make a great sharing platter.

Let people build their own, or set out ready-made options. It’s relaxed, no-cook, and perfect with a cold drink.

New Potato and Green Bean Salad with Mustard Dressing

This summery salad is hearty enough to serve as a main, but also makes a lovely side for barbecued meat or veggie sausages.

  1. Boil the potatoes until just tender, adding the green beans for the last 3 minutes. Drain and cool slightly.
  2. Whisk mustard, vinegar, and oil together to make the dressing.
  3. Toss the warm veg with onion, herbs, and dressing. Season to taste.

Quick Berry & Yoghurt Pots

A no-fuss pudding that makes the most of summer’s soft fruit. Lovely after a light meal.

  1. Layer the fruit, yoghurt, and granola in glasses or jars.
  2. Drizzle with honey and serve immediately.
